Notes

Dos Rios, roasted by 7g in Portugal and labelled as an omni roast — built to work for both filter and espresso. A washed Mexican lot of the traditional Bourbon, Typica, and Mundo Novo varietals, sold in 250 g bags with a three-month best-by window from the roast date. The bag is bilingual Portuguese/English: “Lavado” (washed), “Caramelo toffee, mirtilo e frutos secos”, which the roaster renders in English as “Toffee caramel, blueberry and nuts”.

Expect toffee caramel and nuts as the backbone, with blueberry lifting the top of the cup. The classic washed Latin American shape: clean, sweet, and chocolate-adjacent rather than acid-driven, with just enough fruit to keep it interesting. It should hold together well as it cools.

This is the first Mexican origin in the collection. Profile built on the Light-Medium washed template — 1:16 at a constant 94°C — the lower-middle of the 93–96°C band, where washed coffees extract cleanly without pulling harsh notes. The bloom is widened to 1:2.5 to saturate the grounds thoroughly, but kept at 35s rather than 40s because omni roasts are developed enough to degas more readily than a dedicated filter roast.
