Sourced from Ikore Kofi, a specialty roaster founded in Valencia, Spain in 2014. This lot comes from Mutanga in Gitega province, part of Burundi’s Kirimiro plateau, the country’s central highland belt, where smallholders farm plots of a few hundred trees each and deliver cherry to shared washing stations. Grown at 1,723 MASL. SCA score +84.

Expect a floral lift on the aroma, warm baking spice through the middle, and dark chocolate settling on the finish. Washed Bourbon from this altitude gives a clean, structured cup with gentle citric acidity rather than the aggressive blackcurrant snap of a Kenyan SL: sweeter and rounder, with the cocoa depth doing more work than the fruit.

Profile built on the Ikore Kofi Kenia Kirinyaga AA, the closest comparable profile and the one carrying real tasting feedback for this roaster’s house style. The bloom is widened to 1:2.5 / 40s to saturate a dense 1,723 MASL bean, following the Costa Rica Tarrazú and Colombia Santa Monica lots. Temperature is held constant at 94°C, a degree above the Kenya’s corrected 93°C, since Bourbon’s rounder, cocoa-leaning profile tolerates more extraction energy than Kenya’s acid-forward SL varietals.
