Sourced from Ikore Kofi, a specialty roaster founded in Valencia, Spain in 2014. This natural- processed lot comes from Finca El Indio in Planadas, Tolima — a high-altitude department in southern Colombia known for vibrant, fruit-forward cups. Grown between 1,500 and 2,150 MASL. SCA score +87.

Expect a bright, juicy cup: passion fruit, orange, and raspberry up top, a sweet-wine fermentation character through the middle, and a chocolate base that grounds the finish. The Caturra varietal at this elevation gives both clarity and density.

Profile tuned from the Ikore Kofi Colombia Santa Monica washed baseline, adapted for natural processing: the bloom is widened to 1:3 / 40s and warmed to 95°C (after the Manhattan Shoondhisa natural) to fully saturate and dissolve the residual fruit sugars, with constant 94°C pulses to supply the extraction energy this dense, high-grown (up to 2,150 MASL) bean needs. If the fruit esters read boozy or harsh, drop to a gentle declining tail (94 → 93 → 92°C).
