Sourced from Ikore Kofi, a specialty roaster founded in Valencia, Spain in 2014. This lot comes from Antigua, one of Guatemala’s most celebrated coffee-producing regions — a highland valley ringed by three volcanoes whose ash-rich soil is credited for the region’s distinctive cup character. SCA score +85.

Expect dark chocolate and honey on the body with bright fruit top notes — plum and red apple — typical of well-grown Antigua washed coffees. The traditional Bourbon, Caturra, and Catuai varietals contribute classic sweetness and clean acidity that holds up well through cooling.

Profile tuned from the Ikore Kofi Colombia Santa Monica and Asprotimana Women’s Coffee baselines (both medium washed), with temperature nudged up to 94°C to coax out the bright fruit acids characteristic of Antigua. Bloom held at the standard 1:2/30s given the mid-range altitude.
