Sourced from Ikore Kofi, a specialty roaster founded in Valencia, Spain in 2014. This washed lot comes from the Ywangan and Pinaya areas of the Danu region in Myanmar’s Shan highlands — a fast-emerging specialty origin. Grown between 1,098 and 1,534 MASL. SCA score +85.

Expect a sweet, classic cup: dark chocolate and caramel through the body with a lifting floral top note. The washed Catuai delivers a clean, rounded profile that holds together well as it cools — an everyday-friendly medium.

Profile tuned almost directly from the Ikore Kofi Guatemala Antigua recipe — the closest match in the database (same roaster, Medium, Washed, Catuai varietal, overlapping elevation, and the same dark-chocolate base). The validated 1:16 / 1:2 bloom / 3×94°C constant structure is preserved; 94°C sits at the top of the medium washed window to coax out the delicate floral note.
