Sourced from Ikore Kofi, a specialty roaster founded in Valencia, Spain in 2014. This lot comes from Kindeng in Jiwaka province, carved out of the Western Highlands in 2012 and sitting in the Wahgi Valley, where most PNG coffee is grown by smallholders on garden plots of a few hundred trees. Grown at 1,530–1,830 MASL. SCA score +85.
Expect dark chocolate leading, honey sweetness through the middle, and warm spice on the finish. Arusha, a Typica selection that reached PNG by way of Tanzania, gives the heavy, syrupy body the origin is known for, with soft acidity that sits well behind the sweetness.
Profile built on the Ikore Kofi Papua Nueva Guinea Sigri AA, the closest comparable profile: same roaster, same country, same roast and processing, and effectively the same tasting notes. There are two departures from it. The bloom is lengthened to 40s, and its temperature is brought down to match the pulses at a constant 94°C, aligning this lot with the newer Ikore profiles rather than the hotter bloom used on the Sigri.
