Mystic Melon is a medium-light anaerobic natural from Los Pozos, Panama, grown by Ratibor Hartmann at 1,650 MASL. Roasted in Canada by Phil & Sebastian, this Typica showcases what anaerobic fermentation can do to an already expressive cultivar: expect ripe, syrupy tropical fruit front and centre.

The tasting notes of papaya, melon, and peach are true to form for a well-made anaerobic natural — perfumed aromas, a round body, and sweetness that lingers on the finish. Phil & Sebastian describe it as exploring nontraditional coffee flavours, and the cup delivers on that promise.
